Microwave Radicchio Rolls a new recipe for Microwave Main Dishes to add to my collection of Microwave Recipes. A vegetarian dish that’s super easy to prepare, and I’m sure it will win over everyone’s taste buds!
I love the combination of radicchio, ricotta, and walnuts, which reminds me a lot of my Radicchio Gnocchi with Cream and Walnuts that I always present when I have guests! But these rolls are very similar to my Radicchio Bundles in Jar Cooking except that I used ricotta instead of gorgonzola, which I find a bit lighter and with a more neutral taste, it’s more liked than gorgonzola.

Ingredients
- 16 leaves radicchio
- 3 tbsps walnuts
- 3 tbsps grated Parmesan cheese
- extra virgin olive oil
- 1 cup ricotta
- 5 tbsps walnuts
- 5 tbsps grated Parmesan cheese
- 1 egg
- salt
- pepper
- nutmeg
How to Prepare Microwave Radicchio Rolls
Shell the walnuts.
Place the walnut kernels on a cutting board and chop them coarsely with a knife.
Put the ricotta in a bowl.
Add the egg and grated Parmesan cheese.
Season to taste with salt, pepper, and nutmeg.
Add some of the chopped walnuts, keeping a little aside to sprinkle on the surface of the rolls before cooking them.
Mix to obtain a well-blended mixture.
Clean the radicchio and quickly blanch the leaves in salted boiling water.
Place the radicchio leaves on a cutting board and fill them with a generous spoonful of ricotta filling.
Roll the radicchio leaves over themselves to create rolls.
Grease a microwave-safe baking dish with extra virgin olive oil.
Arrange all the radicchio rolls inside the baking dish, making sure to place them with the seam side down.
Sprinkle all the rolls with more grated cheese and finish with a drizzle of oil.
Add the chopped walnuts you’ve kept aside to the surface.
Bake the radicchio rolls in the microwave oven and cook with the combined microwave + grill function (about 300 W) for 12 minutes.
Then move the dish to the microwave riser and continue cooking at the same function for 3 minutes.
Once ready, serve the microwave radicchio rolls hot.
