Apple and Walnut Salad a classic of light and detox cuisine, a perfect balance of crunchiness, acidity, and freshness. This salad, unlike others like the shrimp salad or the porcini mushroom salad is completely vegan and does not require seasonal ingredients, and can be prepared both in summer and winter.

Preparation
The secret to creating a perfect dish is the selection of ingredients to be used in the dish, here are some tips for having a perfect dish.
To have a tasty salad, I recommend selecting an aromatic salad. You can use chicory or an aromatic mix (baby spinach, arugula, lamb’s lettuce) for a distinctive and varied flavor.
Open the walnuts and divide the fruit into 4 parts, take care to only remove the skin that comes off because it has a bitter taste and might be noticeable inside the salad.
Tip: sauté the walnuts in a pan for a few seconds to release the aroma and crunchiness.
To dress the apple and walnut salad, we prepare a dressing called Senapette, a salad sauce that is easy to make.
Combine a teaspoon of mustard, a tablespoon of oil, a teaspoon of vinegar, and a pinch of salt. The aim is to obtain a thick sauce.
According to your taste, you can find your ideal combination by balancing the ingredients among themselves.
Now it’s time to cut the apple into thin strips. Wait until the end to avoid them browning or oxidizing.
I recommend using a Granny Smith apple because it’s crunchy and has a fresh, tangy taste perfect for the salad.
Your apple and walnut salad is ready!
Plating tips:
Toss the salad and apples in a bowl, arrange them on a serving plate, pour the Senapette using a spoon, and complete by adding the crunchy walnut.
Wine pairing for apple salad:
I recommend for the apple and walnut salad a wine like Ribolla Gialla with an intense, fine, and fruity aroma, with notes of citrus and green apple that pairs well with the main ingredient of the salad.
