Ingredients for 4 people:
- 1 1/4 cups all-purpose flour
- 3.5 oz milk
- 0.7 oz Tuscan pecorino cheese (aged)
- 1.4 oz Tuscan pecorino cheese (fresh)
- 1 egg (medium)
- 2 tbsp sunflower oil
- 1 tsp salt
- 1 tsp sugar
- 1/2 packet instant yeast for savory preparations
Tools:
- 1 Mixer
- 1 Bowl
- 1 Spatula
- 1 Baking Tray or silicone muffin molds
Preparation
Here’s how to make this delicious appetizer in no time without going crazy!
Separate the egg whites from the yolk and place it in a large, clean bowl.
With a mixer, beat the egg white until it becomes white and frothy, then add the milk, salt, sugar, sifted flour, and instant yeast.
Beat again with the mixer until you obtain a thick and rich batter.
Place paper liners in a muffin tray and spoon in a couple of tablespoons of the mixture. It will rise a lot during baking, so fill the liner only one-third full. I place the fresh pecorino cubes both in the center and on top.
You can complete or enrich your muffin with the vegetables you like the most.
For example, I use:
– Apples
– Pears
– Pecans
– Sun-dried tomatoes
– Broccoli
– Peas
– Zucchini
– Speck
I like to have a mushroom top effect, so I fill almost to the edge.
When the molds are filled, bake in a preheated oven in static mode at 392°F for 20 minutes
Take out of the oven and serve.
Your savory muffins are ready!
