Ingredients for 4 people:
- 2 cups all-purpose flour
- 3 tbsps extra virgin olive oil
- 1/4 cup water
- 1 tsp salt
- 1/2 oz fresh yeast ((or 1/2 packet of dry yeast))

Procedure
Making breadsticks at home is very simple, here is the basic recipe. If you want, you can add other ingredients to the dough to flavor the breadsticks.
Place flour, yeast, and water in a bowl and start mixing the dough well. I dissolve the yeast in lukewarm water to make it easier to mix.
Add the oil and salt and continue to mix the ingredients well until you get a homogeneous and compact ball. Adding salt with the oil prevents it from coming into contact with the yeast and stopping the leavening.
Knead well, by hand or with a stand mixer, until you get a smooth ball. It could take up to 10 minutes if you are kneading by hand. With a mixer, it only takes a couple of minutes.
When the dough is smooth, let it rest in a bowl covered with plastic wrap for 2 or 3 hours until it doubles in size.
Let it rest away from drafts that could slow fermentation. If the room is particularly cold or humid, you can help the fermentation by putting the dough in a turned-off oven after turning it on at 175°F for 2 minutes.
After a couple of hours, the dough will have doubled in size and will be ready to roll out.
Flour the work surface and the dough, then roll it out with a rolling pin to a thickness of 1/2 inch to 3/4 inch. (depending on the thickness you want to give the breadsticks).
Make sure to create a rectangle, as it will be easier to cut the dough and create the breadsticks.
Cut the dough with a knife to obtain strips 1/2 inch wide. Gently pull the dough while simultaneously rolling it on itself to get the classic shape.
Do not leave the breadsticks too tight, as they might break during baking.
Place the breadsticks on a baking tray lined with parchment paper, spaced apart.
If you have made very long breadsticks, you might need a second tray to place them on.
Heat the oven to 465°F and place a small pot or oven-safe container with boiling water at the bottom of the oven.
This step is important to create steam in the oven, which will give your breadsticks a crispy crust.
When the oven is hot and the water is bubbling, lower the oven temperature to 390°F and bake your breadsticks for 20 minutes.
Remove from the oven and let them rest. You can store the breadsticks in an airtight bag or an aluminum box to keep them crispy.
