Ingredients

  • 1 roll puff pastry
  • 14 oz potatoes
  • 2.6 oz scamorza cheese
  • 9 oz spinach (or greens)
  • 1 clove garlic (optional)
  • 1 egg
  • extra virgin olive oil
  • salt
  • sesame seeds (or mixed seeds to taste)

Tools

  • Baking tray
  • Pan
  • Pot or microwave-safe dish
  • Bowl

Preparation

  • Wash the potatoes and boil them in lightly salted water until tender. To speed up, you can cook them in the microwave, for about 8 minutes at maximum power.

Once cooked, peel and mash them with a fork in a bowl, adding a pinch of salt and pepper to taste.

  • Clean and wash the spinach, then cook them directly in a pan, with a little oil, salt, and a garlic clove.

Remove any excess liquid and chop them coarsely.

    Slice the scamorza cheese thinly.

  • Unroll the puff pastry and place the potatoes on half of the surface.

Add the scamorza (1), then cover with the spinach (2).

  • Close the puff pastry and seal the edges well with your fingers. With a knife, make some light cuts on the surface.

Now brush the rustic with the beaten egg and sprinkle it with seeds (3).

  • Transfer everything to a baking tray and place in a fan oven at 365-375°F. Bake for about 30 minutes, until the pastry is dry and golden brown.

  • The puff pastry rustic with potatoes and spinach is ready, let it rest for a few minutes, then cut and serve it hot or warm.
