The Orange Paste is a fragrant and natural preparation used in pastry to enrich baked goods like panettone, colomba, as well as creams and desserts. It is made by blending orange pulp along with the peel, creating a soft and intense paste that encapsulates all the aroma of the citrus fruit.
Unlike simple juice, Orange Paste also retains the essential oils from the peel, responsible for that unmistakable fragrance that makes desserts richer and more enveloping. It is perfect for cakes, plumcakes, cookies, sweet leavened doughs, and breakfast pastries.

The same recipe can be followed to make lemon paste or a mix of citrus fruits, the important thing is that they are organic and untreated.   • 8.8 oz oranges (with untreated peel)
  • 1.25 cups granulated sugar

Steps

  • After thoroughly washing the oranges, cut them into pieces and add them to the sugar in the saucepan you will use for cooking

  • Mix and let them macerate for 15 minutes with the sugar

  • After the resting time, put the saucepan on the stove and cook for 30 minutes, stirring occasionally. They will be ready when the orange is soft and glossy and the liquid has thickened

  • Blend it in batches with the immersion blender and chop finely

  • The cream should be thick and spreadable

  • Your Orange Paste is ready to be used

Storage and Tips

Store the Orange Paste in the refrigerator if you use it frequently for sweets and doughs: transfer the orange paste into a sterilized glass jar, seal it tightly
and keep it for 7–10 days at most.


In the freezer, it can last up to 3 months, dividing the orange paste into small portions (for example, in ice cube trays) in a container or food bag. It can be stored for up to 3 months. Thaw only the necessary amount in the refrigerator, the perfect method to always have it ready to use.
