- 1 carrot
- 1 zucchini
- 2 spring onions (or half an onion)
- 4 slices chicken breast
- 1 tbsp soy sauce (for the chicken)
- 3.4 tbsp soy sauce

How to prepare noodles with vegetables and chicken
Let’s start preparing the Noodles with vegetables and chicken. Wash the vegetables, remove the ends from the zucchini, cut it first into thin slices and then cut each slice into sticks to make julienne.
Clean the carrot and also cut it first into slices and then into julienne, thinly slice the spring onions.
In a wok or a large pan, pour some peanut oil, add the chicken breast slices cut into pieces and brown them well on both sides. When they are browned, add a tablespoon of soy sauce and let them flavor for a few minutes, then place them on a plate and set aside.
In the same wok or pan where you cooked the chicken, pour some peanut oil and the vegetables, add a splash of water and cook over high heat for 10 minutes, stirring constantly to ensure even cooking and to avoid burning. When the vegetables are cooked, add the chicken breast and let them flavor together.
Pour slightly salted water into a pot, put it on the stove, and bring to a boil. When the water boils, remove from the heat and add the noodles, let them rest covered with a lid for 5 minutes or the time indicated on the package.
Once cooked, drain them, pour them into the wok with the vegetables and chicken, add a splash of peanut oil, the soy sauce, and stir-fry everything over high heat for a few minutes to allow all the flavors to meld.
