- 4.25 oz carrots
- 3 pickles
- 2 tbsps mayonnaise
- Half tbsp mustard
- 1 tbsp lemon juice

Preparation
Clean the celeriac by removing the skin and the root parts, which are dirtier with soil.
Wash it and cut it into julienne strips, using a simple knife, or a food processor if you want to speed up. Sprinkle it with a few drops of lemon juice, so it doesn’t turn brown.
Peel the carrots and also cut them into julienne strips, with a knife, the food processor, or a coarse grater.
Drain the pickles and cut them into strips. Wash the parsley, dry it, and chop it finely.
Place the mayonnaise, mustard, lemon juice, a pinch of salt, and pepper in a small bowl.
Mix well until you get a homogeneous sauce.
Put the celeriac, carrots, and pickles in a large bowl. Add the sauce, parsley, and mix. If necessary, you can also add a drizzle of oil.
The celeriac and carrot salad is ready, you can serve it immediately if you prefer the vegetables to be crunchier, or store it in the fridge and let it rest for a few hours.
