Air Fryer Pork Ribs with Potatoes

If you crave a fun dinner with zero hassle, prepare air fryer pork ribs! A delicious main course complete with a side dish, and you won’t even have to dirty too many pans!

When I say grilled pork ribs with potatoes, what comes to mind? Surely summer, friends, barbecue, relaxation, vacation, good food to enjoy in company!

How can I argue with that! The biggest problem is that in winter, I just don’t feel like firing up the barbecue and braving the cold to cook meat!

That’s why, if you have an air fryer, you can prepare beautifully golden pork ribs just like those you make on the barbecue, or ‘fornacella’ as we say in Abruzzo!

The ingredients needed are really few! The pork ribs (or chops, as we also call them in Abruzzo), potatoes, garlic, and rosemary, salt, pepper, and olive oil.

Instead of potatoes, you can also use other types of vegetables, but potatoes undoubtedly pair well with pork ribs!

I’ve always been a fan of the air fryer because, in less time, using reduced amounts of oil and dirtying very few dishes, it allows you to prepare great dishes!

The gratinated pork ribs in air fryer is one of those, perfect for any occasion! The perfect solution if you’re always in a hurry in the kitchen, the dish that will please everyone if you decide to invite your friends over for dinner, etc.

In about 40 minutes, they are ready to be served! The meat stays juicy and tender while the potatoes become crispy on the outside and soft inside.

Ingredients

  • 2.2 lbs pork ribs
  • 1.76 lbs potatoes
  • salt
  • 2 cloves garlic (or a teaspoon of garlic powder)
  • A few sprigs rosemary (fresh or dried)
  • 2 tbsps olive oil (to season the potatoes)
  • pepper (only if liked)

Steps

  • A smart tip from Benedetta Rossi to cook ribs in the fryer without the risk of bad odors is to pour a scant glass of water into the bottom of the basket.

  • This will allow optimal cooking without smoke or bad smells forming, so make sure you don’t forget it.

  • Place a perforated parchment paper on the air fryer basket (those who wish can also skip this).

  • Place the ribs on the bottom without adding any seasoning. Preheat the air fryer and then set it to 392°F for 10 minutes.

  • After the time has passed, open the basket, adjust with salt and pepper, and then turn all the ribs, season the other side with salt too, and cook again at 392°F for another 10 minutes.

  • In the meantime, take the potatoes, peel them and cut them into wedges or the shape you prefer, not too thin and preferably the same size.

  • Season with olive oil, salt, pepper, rosemary, and a couple of garlic cloves or garlic powder if you prefer.

  • Mix everything well, and after 10 minutes, open the basket again and place all the potatoes inside.

  • Set it again to 392°F for twenty minutes, turning the potatoes halfway through.

  • Once the program is finished, if, like me, you like the ribs even more golden and crispy, transfer the potatoes to a plate and leave the ribs in the basket.

  • Set it again to 392°F for another 10 minutes, even better if you have the “chicken wings” mode.

  • After 5 minutes, turn the ribs and when the time is up, you can admire the golden and crispy ribs on the surface but still tender and juicy.

  • Ready to be served! The golden air fryer pork ribs with potatoes will make both adults and kids happy!

    Each air fryer has different programs and cooking times. You can cook the ribs with potatoes using only the “chicken wings” program, which will undoubtedly give a nice crunch, but make sure to check often and turn both the meat and potatoes to ensure optimal cooking.

  • What vegetables can I use instead of potatoes?

    Zucchini, carrots, peppers, eggplants, fennel, tomatoes, broccoli. In this case, each of these vegetables will have different cooking times, and I recommend not putting them with the meat as they clearly cook faster. It is better to brown the meat well first and then add the vegetables we prefer. Or we can cook the vegetables first using the specific program if provided by your fryer, and then, once the meat is cooked, combine everything for the last 5 minutes.
