The quick puff pastry croissants are perfect for impressing at the table without any effort! They can be prepared for various occasions. For a birthday buffet, a cocktail party among friends, for holidays and occasions like Christmas, New Year’s, Easter. Or why not, for a romantic dinner perhaps prepared at the last minute!
The salmon puff pastry croissants are really tasty and can be made with just a few simple steps. You will need two rolls of puff pastry and a sharp knife to create the croissants. They should be placed on a baking sheet, brushed with egg white, and decorated with poppy or sesame seeds.
The baking of these delicious savory croissants is also quick. In about 15-20 minutes they are ready to be taken out of the oven! At that point, it’s just a matter of choosing how to fill the quick puff pastry croissants!
Since the Christmas holidays are getting closer, I opted for a filling that we can bring to the table either on Christmas Eve or New Year’s. But if you don’t particularly like salmon, at the end of the recipe you will find all possible substitutes, even vegetarian ones 😉

If you remember, we have already seen how to prepare quick puff pastry croissants.
This recipe is perfect for making both savory and sweet croissants.
Besides the filling, which will obviously be different based on the two versions, we can decorate the surface differently.
For the sweet version, for example, with sugar crystals, colored sprinkles, or simply granulated sugar.
But now let’s move on and prepare these delicious mini savory croissants for a buffet!
On a work surface, lay out the two rounds of puff pastry on top of each other without rolling them out with a rolling pin.
With the help of a sharp knife, cut the circle into segments based on how many croissants you want to get.
I made mini croissants because I like them a lot, but if you prefer, you can make them larger.
Once you’ve cut the entire pastry, roll each segment on itself to form a croissant.
Place the croissants on a baking sheet lined with parchment paper and brush the surface with a little egg white (or yolk or milk if you prefer).
Decorate with poppy or sesame seeds and then bake in a preheated fan oven at 356°F for about 15-20 minutes. Use the static mode for about 20-25 minutes.
Once ready, let them cool slightly and then cut all the croissants with a knife.
First fill with a little cream cheese, then with some arugula leaves, and finally with a piece of smoked salmon.
Continue in the same way until all are filled and arrange them on a nice serving plate!

How to fill the savory puff pastry croissants?
Those who do not like smoked salmon can replace it with cooked ham, salami, mortadella, prosciutto, bresaola. Instead of cream cheese, we can use stracchino, sweet gorgonzola, ricotta, robiola, certosa. Or thin slices of mozzarella, smoked scamorza, and any other cheese of our choice.
What filling can I use for a vegetarian version?
To make savory croissants with a vegetarian filling, we can choose vegetables in oil or grilled such as zucchini, peppers, eggplants. Or with basil pesto, sun-dried tomatoes, and Taggiasca olives.
I don’t like arugula! What can I use?
No problem, you can replace it with lettuce, lamb’s lettuce, iceberg, etc.
Can I fill the croissants before baking?
Yes, in this case, you can fill them with ricotta and spinach for a vegetarian version, or with cooked ham and scamorza and many other combinations based on your tastes.
You will need to place the filling in the center of each segment obtained and form the croissant making sure not to let the filling out.
To help you, make slightly larger croissants than mine.
