Crumble Cake with Blueberry Jam

Do you like crumble cakes? I do, and every time I make it, it’s a joy for the whole family! Today, I’m suggesting a delicious crumble cake with blueberry jam that we can customize to our own tastes.

We can enrich it by using fresh blueberries or completely change the flavor with the preserve or jam we like best.

This crumbly cake with jam is perfect for every occasion! A nice slice at breakfast to get the right boost!! As a dessert to finish the meal in the best way! Or for a snack!

It’s easy and quick to prepare, and it keeps for several days; just cover it with a cake dome to prevent it from drying out. If you want, you can also freeze it so not a single crumb will go to waste!

Its characteristic? It has a crispy surface and a soft filling that we can customize according to our tastes or the seasons.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 6 tbsps butter
  • 2 eggs (medium-sized)
  • 7 tbsps sugar
  • to taste lemon zest (or orange)
  • 1 tsp baking powder
  • 12 oz blueberry jam (or jam of your choice)

Tools

Preparation

  • In a bowl, pour all the dry ingredients: flour, baking powder, and sugar. Mix with a spoon.

  • Add the softened butter at room temperature and the grated zest of half a lemon or orange.

  • Mix well with your hands until the butter melts and is absorbed by the dry ingredients.

  • Add 2 medium-sized whole eggs and mix with your hands until you get a crumbly dough.

  • Take a baking pan and line it with parchment paper to better release the crumble cake.

  • Round, square, or rectangular is fine. Mine was 10 inches, but 9 or 12 inches is also fine because it is a cake that doesn’t rise.

  • Set aside one-third of the dough obtained and pour the rest into the pan, slightly compacting with the back of a spoon.

  • Fill with blueberry jam (you can choose the flavor you prefer) and spread it well.

  • Take the dough set aside and cover the entire surface with crumbs.

  • Bake your crumble cake at 338°F, preheated fan oven, for about 40 minutes.

  • You can also bake the crumble cake with blueberry jam in static mode for about 5-10 minutes more.

  • Remember, the cooking time varies from oven to oven, and you must always check.

  • When the surface appears nicely golden, remove from the oven and let it cool before removing it from the mold.
