Preparation
I should mention that, to save time, I preferred to have the sea bream cleaned directly at the fish counter.
However, if you’re experienced, you can obviously clean the fish at home.
Once the sea bream is cleaned, rinse it well under cold water.
Then pat the sea bream dry with kitchen paper, even inside, to remove excess water.
Squeeze the juice of a small lemon and pour it into a small bowl with 1 1/2 tablespoons of olive oil and emulsion.
Take another small lemon, wash it well, and cut it into thin slices.
A recommendation, if possible use organic lemons.
Salt the sea bream on the outside and inside the belly and stuff them with the lemon slices.
Take a large baking tray, line it with baking paper, and place the sea bream stuffed with lemon slices on top.
Pour the lemon juice and olive oil emulsion on top.
Add the garlic cloves and a couple of sprigs of rosemary.
Wash the cherry tomatoes well and cut them into two or four wedges. Arrange them inside the tray.
Season the cherry tomatoes with salt and the remaining 1/2 tablespoon of oil. Pepper the surface of the sea bream.
Bake in a preheated static oven at 350°F for about 30 minutes.
After the time has passed, check if the sea bream is cooked and serve.
