- 7 oz Cow's Milk Ricotta

Preparation
To prepare the Cooked Ham Mousse, it really takes just 5 minutes. To make it irresistible, I recommend choosing a high-quality cooked ham.
You can have it sliced at the deli counter into a single piece, which you will then reduce to a cream with a mixer.
As for the ricotta, choose the fresh from the counter option, not the pre-packaged kind, it’s definitely tastier.
Ask for a dry ricotta that doesn’t contain much whey. I chose the cow’s milk one, but if you prefer, you can opt for mixed, sheep, or even buffalo ricotta.
Now, let’s get to it! Take the walnut halves, place them in a mixer, and chop them coarsely. Don’t like walnuts? You can use almonds or pine nuts.
Cut the cooked ham into cubes; if you bought it sliced, shred it with your hands, place it in the mixer along with the walnuts, and blend for a few seconds.
Finally, add the ricotta, a pinch of salt and pepper, and a tablespoon of olive oil. Blend again until you get a nice mousse.
Pour the cooked ham cream into a bowl and refrigerate until ready to serve.

If you need to reduce or increase the quantities, just calculate the weight of the cooked ham and ricotta in equal measure (e.g., 3.5 oz cooked ham + 3.5 oz ricotta or 12 oz cooked ham + 12 oz ricotta, etc., etc.).

I don’t like ricotta! What can I use instead?
You can use mascarpone, spreadable cheese, or robiola. However, since these cheeses have a firmer consistency, if you notice that the mousse is too dry, you can add a little milk (be sure to add sparingly) until you achieve the desired consistency.
How long does the ricotta and ham mousse last?
Cover the mousse with plastic wrap and keep it in the fridge for about a couple of days. I do not recommend freezing it; it is better consumed fresh.
What can I use instead of cooked ham?
You can use mushrooms or artichokes, which you can cook in a pan or use the ones in oil for a vegetarian version. Or mortadella, tuna fillets, smoked salmon, or avocado to which I would add some cherry tomatoes.
