Ingredients
- 1 Pandoro (700 g)
- 4 Eggs
- 3/4 cup Sugar
- 2 cups Mascarpone
- 2/3 cup Hazelnuts
- Coffee (diluted with milk or water)
- Milk
- Unsweetened Cocoa Powder

Preparation
First, prepare a coffee pot for about 3 people. Then put it in a bowl, sweeten to taste, and dilute it with some milk (if you prefer, you can replace the milk with water).
Take two bowls and separate the yolks from the whites. Beat the yolks with the sugar for about 10 minutes until you get a nice fluffy and frothy mixture.
Then add the mascarpone and work for a few more moments until you get a nice homogeneous cream.
Beat the egg whites to stiff peaks with a few drops of lemon. Once they are perfectly firm, gradually incorporate them into the egg and mascarpone cream, mixing with a spoon from bottom to top.
Take the pandoro and cut it horizontally into many discs (you can use either the star-shaped or the classic round pandoro). Coarsely chop the hazelnuts.
Take a baking dish and arrange the pandoro slices inside to cover the bottom. Slightly soak with the coffee and milk mixture, and fill with a few tablespoons of mascarpone cream.
Dust with a bit of unsweetened cocoa powder and add a nice handful of chopped hazelnuts. Make the second layer with the pandoro slices and again drizzle with some coffee and milk.
Fill with the mascarpone cream, dust with cocoa, and decorate with hazelnuts. Continue in the same way until all the ingredients are used up.

Can I use panettone instead of pandoro?
Of course! Christmas tiramisu is excellent with both pandoro and panettone. You can even use the ones with filling, making your tiramisu even more delicious!
If, for example, you have a pistachio pandoro/panettone, you might think of adding a nice spoonful of pistachio cream to the mascarpone cream; it will be perfect!
Or if you have a chocolate panettone, you can add chocolate shavings, white or dark, to the cream.
