Pan-Seared Salted Cod with Olives and Potatoes – Easy Recipe

The pan-seared salted cod with olives and potatoes is a second course rich in taste and flavor. Salted cod is used in the kitchen to create many delicious traditional recipes, such as Vicentine, Lucanian, or Cosentino salted cod. We can enjoy it fried in batter, baked, or pan-seared.

A simple dish to prepare yet perfect for many occasions. The stewed salted cod does not require long cooking times, so we can prepare it on any ordinary day to bring a tasty and genuine dinner to the table. It certainly cannot be missing during the Christmas holidays, for example, on Christmas Eve.

Ingredients

  • 1.5 lbs Salted Cod (already soaked)
  • 2 Potatoes (about 9 oz with skin)
  • Black Olives (about 5 per person)
  • 1 Carrot
  • 1 rib Celery
  • 1 Onion (medium)
  • 1 tbsp Olive Oil (per person)
  • Salt (only if necessary, to be added only when cooking is finished)
  • A few tbsps Tomato Sauce
  • as needed Flour (for coating the cod)
  • as needed Parsley (fresh, finely chopped)

Preparation

  • First, cut the potatoes into chunks and boil them in plenty of salted water for about 5 minutes. Meanwhile, in a saucepan, sauté a bit of onion, a carrot, and a rib of celery finely chopped.

  • Then add the pre-soaked salted cod that you have previously dusted with flour (shake each piece to remove excess flour) and sauté it for a couple of minutes.

  • For convenience, I chose to use pre-soaked salted cod ready to use, but if you wish, you can soak it yourself for about 48 hours, changing the water at least twice a day.

  • Add the black olives (about 5-6 per person) and a few tablespoons of tomato sauce to the salted cod and continue cooking. After about 5 minutes, add the potatoes (drained well after cooking) and let everything cook slowly, covered, for about 30 minutes.

  • I deliberately did not add salt to avoid making it too salty. Once ready, place the salted cod on a nice serving dish, garnish with fresh parsley, and enjoy this delicious pan-seared salted cod! Until the next recipe 🙂
