Mini pizzas or pizzelle? Call them what you like, they’ll win you over!
Easy to prepare, delicious to eat. And they’ll ask for seconds! They are also convenient to freeze and keep as a backup for those moments when you don’t have time, grab a mini pizza and go! Kids’ friends dropping by unexpectedly? Mini pizzas are perfect!
It all sounds like a slogan, but they are really handy and easy to make. Ideal for kids, for a snack or a picnic. They’re delicious and you can top them as you like. On this occasion, I even topped them with broccoli rabe, marinara with anchovies, and the fail-proof margherita.
They deserve a front-row spot among the comfort foods of our days, and even when you are tired in the evening watching a movie, you want to eat in the company of a good glass of beer.
Pizza is always welcome, and mini pizzas are even more convenient with that soft, inviting crust.
You’ll need: flour, water, yeast, and honey…What a novelty, you might say! The novelty lies in how we knead, and I’ll explain everything below!

Ingredients
Flour, water, and salt. And then you need fresh yeast and honey, a simple alchemy for good leavening
- 4 cups flour
- 0.53 oz fresh yeast
- 2 tbsps honey
- 3 tbsps olive oil
- 1 cup water (Warm)
- 2 tsps salt
- 1 cup tomato sauce (Prepare a sauce with: Passata, olive oil, minced garlic, oregano, and salt. All cold.)
- as needed mozzarella (You choose the quantity.)
- 2 salted anchovies (Deboned)
- as needed cooked ham

Steps
Pour the warm water into a bowl and dissolve the yeast; add the honey and oil and mix well.
In another large bowl place the flour and salt, mix well and add the liquids you prepared earlier. Knead carefully until you get a smooth and soft dough. Cover and let it rise until it doubles in size.
After the necessary time has passed, divide into approximately 60-gram pieces and form balls that you will let rest for about an hour, covered.
At this point, flatten your balls and leave the edges higher.
Prepare the mini pizzas, you can top them with tomato sauce, mozzarella, ham, anchovies, and then follow your imagination.
Bake in a preheated oven at 392°F for about twenty minutes or until the edges are nicely golden.
Some extra tips
As already mentioned, you can freeze them ready for ’emergencies’. Or freeze the already formed mini pizza, ready to be topped. Take them out of the freezer 3 hours before, top, and bake! Great in mini version for breakfast or school snacks, replacing packaged food. Mini version as a rural appetizer or aperitif, topped as above or with tuna and onions, salmon, soft cheese, and ham… In short, special friends!
