Rustic Moscato Cake. Harvest time in Langa, what better period to savor this simple cake scented with sweet Moscato.

Moscato is one of the sweetest and most appreciated wines for its low alcohol content.

In this dessert, I used Moscato grapes precisely for their incredible aromatic harmony.

A simple and quick dessert to prepare, ideal for a light end to a meal or a healthy snack.

Ingredients

Flour, eggs, and Moscato grapes

  • 4 cups flour
  • 3 eggs
  • 1/2 cup sunflower seed oil
  • 1/2 cup sugar
  • 1 packet baking powder
  • 2/3 cup milk
  • 2 bunches white grapes (Moscato or Concord grapes)
  • as needed brown sugar (To sprinkle on the surface)

Steps

Mix, Assemble, Bake

  • In a bowl or stand mixer, combine the sifted flour with the baking powder and the rest of the ingredients. Mix carefully. You will obtain a mixture that is not particularly fluid but soft. If too compact, add a little milk. I could give you the weight of each ingredient, but it would become more complicated, for me and for you. I always try to share recipes suitable for everyone, easy to manage. Not all eggs are the same size, the flour doesn’t always absorb the same amount of liquid, and so on…

  • Place half of the batter in the pan (I use a steel one because I like to give it an oval shape and line it with parchment paper) and cover with grape berries.

  • Then add the rest of the batter and top the surface with more grapes. I made a sort of lattice and sprinkled the dough with brown sugar. As seen in the photo.

  • Bake in a preheated oven at 375°F for about 25/30 minutes. Wait until it is cool to cut. If you can resist!

Some Extra Tips

The origins of the Moscato grape variety seem to date back to Roman times, one of the oldest cultivated in the Mediterranean area.

Mainly cultivated in Langa, it involves many hilly areas with altitudes ranging from 492 to 1640 feet, with a notable temperature range that favors the aromatic development of these grapes. Cultivation developed in the provinces of Asti, with Canelli in the lead for production, Alessandria, and Cuneo.

Moscato wine goes well with dry cookies, classic panettone, hazelnut and almond-based desserts, or even paired with soft and fresh cheeses, among these the Roccaverano and also try with a friciula accompanied by a lard and herbs spread and you’ll feel butterflies fluttering around
