Almost Zucchini Carbonara

Almost Zucchini Carbonara is a quick and complete first course. Try it for its simplicity and speed of preparation. It takes little: some zucchinis, eggs, cheese, and speck or bacon. If I follow my taste, I use speck, but if I want to please my husband, I go for bacon.

Preparing daily meals is no longer so difficult; we have everything at hand. Just organize to be able to put simple first courses complete with all the nutrients on the table.

Ingredients

Spaghetti and zucchinis and then…

  • 8.8 oz spaghetti
  • 3 zucchini
  • 3 eggs
  • 3.5 oz diced speck (Or bacon)
  • 1 onion
  • to taste Grana Padano cheese, grated
  • to taste olive oil
  • to taste salt
  • to taste black pepper

Steps

Fry, cook, sauté…

  • Almost Zucchini Carbonara
  • Sauté the onion, 2 zucchinis cut into slices, and the speck.

  • Flour the remaining zucchinis and fry them to make them crispy

  • Cook the pasta and mix with the zucchinis and onions, then add the eggs beaten with cheese and black pepper, and finally the fried zucchinis.

  • Mix carefully and serve. They are delicious both hot and cold.

Some More Tips

Before frying the zucchinis, coat them with semolina flour; they will remain crispier. Add at the end to maintain this texture. You can use bacon instead if you prefer; I change each time to please everyone. They are delicious reheated in the air fryer as they will also be gratinated.
