Ingredients
- 9 oz chicken breast (thinly sliced)
- 2 zucchini
- 3 oz speck
- 3.5 oz provola (or scamorza)
- breadcrumbs
- herbs (dried, as desired)
- extra virgin olive oil
- salt

Preparation
Wash the zucchini, trim the ends, and slice them thinly lengthwise. Use a slicer or mandoline to ensure even thickness.
Grill the zucchini for a few minutes on a non-stick grill pan, adding a pinch of salt.
Take the chicken slices and coat them in breadcrumbs, mixed with herbs as desired (thyme, oregano, rosemary, or others).
Place a slice of speck, 1-2 slices of zucchini, and 1-2 thin slices of provola on each (1).
Roll the chicken to form rolls, and secure them with 2-3 toothpicks (2).
Cut each roll into 2-3 slices (depending on size). Each roll should remain secured with the toothpick, otherwise it will open.
Heat a pan with a little olive oil, place the rolls in, and brown them on all sides (3).
Continue cooking by lowering the heat slightly until the meat is cooked. Cooking times depend on the thickness of the chicken breast.
The chicken rolls with zucchini and speck are ready, remove the toothpicks and serve them hot, drizzled with the cooking juices.
Tips and Notes
For this preparation, the chicken slices need to be very thin, otherwise it will be difficult to roll and cook them.
Grill the zucchini for only a few minutes; they shouldn’t char, just be soft enough to roll.
Be careful not to over-salt, as both speck and cheese are already flavorful on their own.

You can substitute chicken with (thinly) sliced veal or pork loin. Instead of speck, you can use cooked ham.
