I usually cook in batches for the family, I have a primary job, so I have to make time, My passions, between gardening and cooking, have slipped in between; work as an obligation, family as a priority.

The garden helps me a lot, my chickens for fresh eggs, the cheese from my son’s farm, so I can’t complain; the passion for cooking does the rest!
I prepare these croissants every now and then. There is always a lot of choices on foods to prepare, recipes to repeat, and others to discover, but some make a comeback a bit more often. And that’s exactly the case with these croissants!

Ingredients
As already mentioned, with flour, eggs, and sugar you can create endless delicacies.
- 1 brioche bread (Dose described in the recipe)
- to taste orange marmalade (I used my jelly)
- to taste candied fruits
- to taste raisins

You can knead either by hand or with a stand mixer, a rolling pin to roll out the dough, a cutter or knife to cut shapes, mats, or baking paper.

Steps
Once the dough is ready, proceed with filling and shaping the croissants.
After making the dough and allowing the first rise, roll it out on the work surface and
Cut strips 0.4 inches wide and 12 inches long. Try and adjust according to your tastes, keep in mind they will rise until doubled. Brush with orange jelly or jam.
And form the swirls and then arrange them on the mats.
With the other half of the dough, cut triangles and fill them with candied fruits and raisins, roll
And shape the croissants. Let them rise in the oven with a pan of boiling water until doubled.
Remove from the oven and start preheating to the indicated temperature. Bake until golden brown. You can also sprinkle the surface with almond flakes, I added maple syrup on the croissants and bitter cocoa for contrast.
Or dust with powdered sugar.
They are soft and fragrant. I guarantee they will be a hit!
Like most croissants, they lose crispness the next day but are still great for breakfast. Once formed, they can be frozen and taken out the night before, covered with a cloth, and let rise overnight at room temperature; in the morning, they will just need baking.

Can I use whole wheat flour?
Yes, of course, and they are delicious filled with dried fruits and jam, or with the addition of flax and sesame seeds. I also recommend using multigrain flours.
Can I use margarine instead of butter?
The result does not change. I use butter by choice.
