  • 1 3/4 cups flour
  • 1 1/3 cups almond flour (Not too fine)
  • 1 cup sugar
  • 2 large eggs
  • 1 cup milk
  • 2/3 cup sunflower oil
  • as needed raspberry jam
  • 1 packet baking powder
  • as needed sugar crystals

I always use many small bowls because I prepare all the ingredients first to proceed without too many hiccups; you will need a bowl to mix the batter and a muffin tray for the oven

Steps

Once you have weighed all the ingredients the game is almost done!

  • As suggested above, prepare all the ingredients first to proceed quickly and not have to stop and start again.

  • In the bowl, combine all the liquid parts: eggs, milk, oil, and give a first blend, not to whip, but just to emulsify

  • Then add the dry ingredients: flour mixed with sifted baking powder, almond flour, and sugar; mix with the blender for 2-3 minutes to obtain a homogeneous mixture.

  • Pour into the cups already placed in the tray

  • And add a teaspoon of jam for each muffin

  • Distribute the sugar crystals and bake in a preheated oven at a temperature of 375 degrees Fahrenheit for about 15 minutes. Try not to open the oven, except towards the end for the toothpick test. Once you get a nice browned color, you can remove them.

    Yes, you can use gluten-free flour, the texture will be slightly less soft, but they will be just as good. I recommend using a flour with characteristics already known to you. Sometimes they absorb liquids differently between various brands.
