Delicious Savory Eggplant Pie

Daniela savory pie passion present!!! Those who follow me know that I love preparing savory pies, and especially getting creative with the fillings. Today I prepared it with eggplants, but to make it more delicious, I added mortadella. I made the base myself, super easy to prepare and it really takes just 5 minutes. Ingredients

  • 7 oz all-purpose flour
  • 3.5 oz water
  • 1/2 tsp fine salt
  • 0.7 oz olive oil
  • 1 eggplant
  • 3 slices mortadella
  • 3.5 oz pizza mozzarella
  • to taste oil and salt

Tools

  • Stand Mixer
  • Plastic Wrap
  • Food Chopper
  • Rolling Pin wooden
  • Non-Stick Pan round

Steps

  • Put the flour, water, oil, and salt into the thermomix bowl.

  • Knead for 2 minutes at spike speed.

  • Wrap with plastic wrap and let rest for 30 minutes.

  • Take the dough and roll it out on a lightly floured board.

  • Add the eggplant slices and cook for 10 minutes with oil and salt in microwave or air fryer.

  • Add the mortadella and diced mozzarella.

  • Close the edges and bake at 392°F for about 30 minutes in a static oven.
