Do you want to know how I make mint and chocolate muffins?
I’ll explain how they are made… I used fresh mint, the one that grows in my garden; fragrant, fresh!
It grows everywhere and in disorder, so I ‘must’ consume it, I give a lot away, make syrup and chocolates; I was missing muffins.
The basic recipe is always the same, only the flavor changes, fine and fresh!
Mint is a widespread plant that also grows wild, but it is cultivated on a large scale for its numerous therapeutic and cosmetic uses. The most commonly cultivated variety is peppermint, rich in essential oil, resins, and bitter substances. Mint is known for its expectorant, carminative, and digestive properties, and it is widely used in cooking.
In cooking, mint is used to add a touch of freshness to dishes. It is used in the preparation of sweets and desserts, such as ice cream and herbal teas, but also to enrich savory dishes like salads, sauces, and meats. Its intense fragrance and fresh flavor make it a very versatile ingredient that fits well into many preparations. But what if we also add chocolate to mint muffins?

Ingredients
- 3 cups cups flour
- 1 cup cup milk
- 3/4 cup cup corn oil
- 1 cup cup sugar
- 2 eggs
- 1 packet baking powder
- 1 bunch mint (only fresh leaves)
- 1 cup cup chocolate chips

Steps
A delicious and quick snack to prepare
Blend the leaves finely with a portion of the required milk
In a bowl or the planetary mixer bowl, first add all the dry and sifted ingredients, except for the chocolate chips, and then the wet ingredients; milk with mint, milk, oil, eggs.
Add the chocolate chips and mix well with the whisks or planetary mixer…
Pour the batter into the molds and bake in a preheated oven at 392°F until cooked; it takes about 15 minutes. Check the cooking with a toothpick
Once removed from the oven, sprinkle with powdered sugar, if you like you can pass the sugar through the coffee grinder with some mint leaves and sprinkle it afterward
Your muffins are ready to enjoy… Mint and chocolate, a delightful sensation!
They keep well outside the fridge, but be warned, they have a short shelf life as they are delicious!
