Ingredients for the Sugar-Free Apple Bundt Cake
- 5 eggs (XL size)
- 3 1/4 cups all-purpose flour
- 3/4 cup water
- 1/4 cup butter (plus extra for greasing the mold)
- 1/4 cup stevia
- 2 Royal Gala apples (around 14 oz peeled)
- lemon zest (grated)
- 1/2 lemon juice
- 1 packet baking powder for desserts

Preparation of the Sugar-Free Apple Bundt Cake
To start, melt the butter in a saucepan and once melted, let it cool.
Peel the apples, remove the cores, and cut them into cubes. Place them in a bowl with the juice of half a lemon, mix, and set aside.
In a bowl, pour the eggs and stevia and quickly mix with a spoon.
Add the cooled melted butter, water, and grated zest of one lemon to the eggs (I use a coarse grater), mix well until all ingredients are combined.
Sift the baking powder with the flour, then add them to the bowl with the liquid mixture and mix well with a spoon until you obtain a medium-thick, lump-free mixture (you can use electric beaters to make it easier).
Add the apples to the batter, and mix until they are well incorporated.
Grease and flour the bundt pan, pour in all the apple bundt cake batter with the help of a kitchen spatula. Lightly tap the pan to level the batter.
Preheat the oven to 392°F (200°C) and once it’s at temperature, bake for 50 minutes. By the end of the cooking time, the apple bundt cake should be nicely golden. Always perform the toothpick test near the end of baking, as ovens can vary.
Once the sugar-free apple bundt cake is cooked, turn off the oven and let it cool inside with the door open. Once cooled, place it on a serving plate and enjoy its full flavor!
