Mayonnaise with Hard-Boiled Eggs is an easy basic recipe, a variation of classic mayonnaise made with raw eggs that I decided to try to achieve a safer cream for both children and adults.

After my mayo variations like Egg-Free and Lactose-Free Mayonnaise, Squid Ink Mayonnaise, or Seasoned Meat Mayonnaise, I decided to prepare this mayonnaise perfect for accompanying all my fried recipes and not only, like Eggplant Cutlets in the Air Fryer or Fennel Cutlets in the Microwave or Fennel Cutlets in the Air Fryer but also meat and fish like Fried Shrimp in the Air Fryer.

Ingredients

  • 3 eggs
  • 1/2 cup sunflower seed oil
  • 1 tbsp lemon juice
  • 1 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1 pinch salt
  • 1 pinch pepper

How to Prepare Mayonnaise with Hard-Boiled Eggs

  • Put the eggs in a small pot and cover them with cold water.

    Place the pot on the stove, and when the water boils, count 9 minutes of cooking.

    When the eggs are hard-boiled, cool them immediately under running water and peel them.

    Place the peeled eggs in a blender.

    Add the sunflower seed oil and the teaspoon of Dijon mustard.

  • Add lemon juice, vinegar, salt, and pepper.

  • Close the blender and blend until smooth and creamy.

    Transfer the mayonnaise with hard-boiled eggs to the fridge and let it rest for at least 30 minutes before serving.

How to Store Mayonnaise with Hard-Boiled Eggs

Mayonnaise with hard-boiled eggs can be stored in the fridge for two days. I do not recommend freezing it.
