Mix coconut flakes with peach and apples, and…
Strange but true, this combination was on my mind for a few days. I’m not particularly fond of desiccated coconut, I have some summer recipes I gladly prepare, but I prefer fresh coconut… And I love it!
As for the rest, the flakes remain almost undisturbed in the pantry… Last night I couldn’t sleep, and not to disturb my spouse, as it often happens, I decided to make a dessert… Strange but true!
And since there was already an idea in my mind, I put it into practice… A light coconut shortcrust… Peach jam and apples…
A tasty and fragrant pie, I don’t like using synthetic flavorings, so I look for other solutions…
The peach jam is homemade… Fragrant! The coconut is fragrant, the apples give that touch of softness and the right moisture to the whole wheat crust and coconut.

Ingredients
Apples, peaches, and coconut…
- 3 1/3 cups whole wheat flour
- 1 1/4 cups desiccated coconut
- 1 1/4 cups butter
- 3/4 cup sugar
- 2 eggs
- 4 apples
- 2 1/2 cups peach jam
- to taste powdered sugar

Steps
Combine the flour, coconut, and sugar, mix well and add the rest of the ingredients. Mix well and finish kneading on the work surface until you get a smooth dough

Place in the pans and pour the peach jam
In one, I added the apple slices
In the second, I created a pattern with the leftover dough
I let it rest in the fridge for about an hour and then baked at 338°F for about twenty minutes
Once baked, sprinkle with powdered sugar
Optionally cover with food gelatin, sometimes on the tart when I fill it with apples, I use it to give further softness to the apples and prevent them from drying out
It can be safely stored outside the fridge. Optionally, it can be frozen. I made a rectangular tart, it is naturally possible to create a round tart or small ones. This base also pairs well with chocolate, you can also bake the base and fill with chocolate cream and sprinkle with coconut
