Potato and Speck Pie

Potato and speck pie is a savory dish full of flavor that takes just 10 minutes to prepare. A quick and flavorful recipe, very good, but I also recommend the mountain pie or the country pie; these recipes are all made with ready-made shortcrust pastry, but if you don’t like this ingredient, you can always replace it with puff pastry. Ingredients

  • 1 roll shortcrust pastry (or puff pastry)
  • 4.2 oz speck
  • to taste salt
  • 2 potatoes
  • 0.7 oz Parmesan cheese
  • 3 eggs
  • 3.5 oz scamorza cheese (sliced)

Steps

  • Unroll the shortcrust pastry over a pie dish, then prick it with a fork.

  • Fill the pie with speck and sliced scamorza cheese.

  • Next, grate the potatoes, then squeeze and transfer them into a small bowl, add a pinch of salt and the egg, mixing well with a fork.

  • Pour the mixture over the filled pie, distributing it evenly over the entire surface.

  • Sprinkle with grated Parmesan cheese, drizzle with a touch of extra virgin olive oil, and finally, bake at 375°F in a convection oven for about 30 minutes.

  • Remove from the oven and serve it in wedges, hot and still stringy.

Storing the Potato and Speck Pie

This type of pie is best consumed the same day. However, if you don’t like speck, you can replace it with any cold cuts you prefer, such as pancetta, cooked ham, or salami. Puff pastry can be replaced with shortcrust pastry or alternatively with crazy dough.
