Almond cookie recipe…One dough for delicious and beautiful cookies. Ideal in these pre-holiday days for a special thought, to offer with a coffee or tea.
Not everyone has the time to get into the kitchen; between family, work, and home, time is tight, and there’s not always the possibility or desire to be creative, this is a little hint. At Christmas, I gladly gift homemade sweets, knowing they are appreciated; the truth is, sweets are always appreciated, not just at Christmas…But now it is also time for gifting, and packaged in a tin box, or simply small cardboard boxes or cookie bags, they will be greatly appreciated.
Almond cookies are also simple to make, and then by cutting them into different shapes with fillings and decorations, you will get a tasty and beautiful treat

Ingredients
Flour, butter, and eggs…
In the quantities, I don’t include the ingredients for decorating; they are small details…Personally, I used pistachio cream and Nutella to fill the square cookies, colored sugar glaze, pistachio crumbs, colored sprinkles, pearls, chocolate flakes…Isomalt to create the glass effect of the cookie.
- 2 cups flour
- 2 cups almond flour
- 2 eggs
- 10 1/2 tbsp butter
- 1 vial almond flavoring

Mixing bowl, piping bag for decorating, and cutters for cutting…
Steps
There are many steps, but they become addictive when you discover how many ideas come to mind
Combine all the ingredients and mix quickly until you get a homogeneous dough
Roll out the dough and cut into desired shapes, half of the square shapes I cut a hole in the center to pair and fill them…as you cut keep them in the refrigerator…They will hold their shape better during baking.
When you are ready to bake, preheat the oven to 356 degrees Fahrenheit, let it heat up and proceed.
To decorate with transparency, melt the isomalt in a saucepan, I chose to color it green with gel colors. After baking the cookies, place them on the silicone mat and pour the isomalt. Let cool and voilà
For the hearts, use white and red powdered sugar glaze
I layered 2 cookies, one already cut in the center before baking; filled with Nutella or pistachio cream and then decorated.
They keep well for a few days, being dry cookies, the creams used do not cause problems.
Gifted in a tin or wooden box, they make a perfect gift!
