Delicious spaghetti recipe

Every day, new vegetables are harvested from the garden, every day a new recipe is searched for, or just a variant…

This time it’s the turn of the spaghetti, which are never missing at home!

There are peppers, onions, carrots… Zero-mile vegetables even though I live in a small town my garden is among the houses in the courtyard, so I’m lucky; I harvest and cook!

Fresh eggs, cheeses, and meat from the children’s farms do the rest!

In this case, I also used sheep ricotta, along with the eggs from my hens… Super delicious spaghetti

Spaghetti are a national dish, there are hundreds or maybe thousands of recipes for this pasta shape.

I don’t cook them often, because I make pasta at home, so I don’t buy them much, but there are several recipes that require spaghetti… So!

A simple, everyday, economical recipe accessible to everyone; as my proposals often are. Not everyone can spend a lot of time in the kitchen, myself included, so I adapt to the speed of breaks, or the tiredness of the evening, to dine with a good first course, as a single dish, which I often do to avoid eating too much!

We must still keep an eye on our health, luckily my garden produces well, I have fresh vegetables all season, and the eggs are always from my hens… Dinner assured!

Ingredients

  • 12 oz spaghetti
  • 6 sweet green peppers (long type like friggitelli)
  • 1 carrot
  • 2 onions
  • 1 bunch basil
  • 2 eggs
  • 7 oz sheep ricotta
  • to taste salt
  • to taste olive oil

Tools

A cutting board and a pot to cook the spaghetti, a pan to brown the vegetables

Steps

  • Put the pot with salted water on the stove. Cut all the vegetables into small pieces

  • Brown in a little oil.

  • Add eggs and ricotta, adjust salt, and beat with a fork to mix well

  • Meanwhile, cook the spaghetti al dente, and pour them into the vegetables

  • Add the eggs with ricotta and mix well, if you like, add a generous grind of black pepper

  • Plate and grate a good amount of pecorino or even better salted ricotta! Enjoy your meal!

Eat immediately, if you have any leftovers, the next day heat them in a pan and they are delicious
