Ingredients for the Sandy Chicken Breast
- 12 oz chicken breast (4 slices not thin)
- 1/2 cup breadcrumbs
- 1 tbsp parsley (fresh)
- 1 clove red garlic
- 1 pinch fine salt
- 2 tbsp extra virgin olive oil

Preparation of the Sandy Chicken Breast Without Eggs
Start by washing and drying the parsley, then finely chop it on the cutting board along with the garlic, place it in a bowl, add the breadcrumbs and a pinch of salt, and mix very well.
Pour the seasoned breadcrumbs onto a work surface (the cutting board used for chopping is fine), brush 1 tablespoon of oil on both sides of the chicken breast slices.
Dip each slice into the seasoned breadcrumbs, pressing on both sides several times so that the breading sticks well to the meat, then place the chicken slices on a baking tray with parchment paper.
Preheat the oven to 430°F, and once hot, pour the remaining oil over the sandy chicken and bake, cook for 30 minutes, turning halfway through until the slices are well browned. Once cooked, remove and enjoy, it will become one of your favorite dishes!
Notes
The trick of spreading oil on the meat before coating it in breadcrumbs allows you to skip the use of eggs!
You can also cook the sandy chicken breast in a non-stick pan, just add the remaining oil to the pan and cook them over medium heat until browned, turning them often.
