- 2 1/2 cups Milk
- 2 1/2 cups Flour
- 3 Eggs (room temperature)
- 1 pinch Salt
- as needed Butter (or sunflower seed oil)

Preparation
Preparing the crêpes or pancakes – basic recipe is really easy and quick. In a medium-sized bowl, break the eggs and start beating them with an electric mixer.
Then pour in the milk and continue to beat the mixture to blend the ingredients well. Finally, while continuing to mix, gradually add the flour and a pinch of salt.
Mix with the electric mixer for a few minutes until the mixture is smooth and homogeneous, then place it in the refrigerator for 30 minutes.
After the resting time, pour it with a ladle into a crepe maker (or non-stick pan of medium dimensions), lightly greased with butter or sunflower seed oil, spreading the batter with the appropriate tool or by rotating the pan.
Cook for several seconds on each side until the surface detaches itself and small brown spots form. As you make them, lay them on a cloth and let them cool spaced apart.
Once finished, you can fill them or freeze them separated by parchment paper sheets and wrapped in cling film. Bon appétit!!!
