In my opinion, quince paste can be eaten as a dessert, a snack, an energy boost, or a soft candy…
I’ll write down how to prepare it… The quince… Some call it quince pear… In truth, it has nothing to do with apples… A fruit on its own, if you open it inside, the seed arrangement is different from apples… Similar to pears.
It is certainly delicious in quince paste form… Raw, it is inedible and sour…
First of all, look for quinces… A beautiful and fragrant fruit that smells of other times.
I have prepared a good stock… I will write the dose for 1 kg of cleaned apples.

Ingredients
Quinces and sugar!
- 2.2 1.1 lbs quinces
- 1.1 lbs brown sugar
- 1.1 lbs white sugar (Plus the final sugar)
- as needed water

Steps
After cleaning the quinces, cut them into pieces without peeling off the skin
Cook them covered with water just above the quinces, for 30 minutes. Don’t throw away the cores but cook and strain them. It’s an excellent quince juice
Pass the quinces through a sieve… Add the same weight of sugar, half brown and half white. Put it back on the stove on low heat for at least 1 hour… Stir continuously as they easily stick to the bottom. The puree should be thick and not stick much to the spoon. At this point, pour the mixture into a greased or parchment-lined tray, dry it in the oven at 140°F for 4/5 hours. Those lucky enough to have a wood stove can use the stove’s oven. Another option is to use a dehydrator overnight.
