Super Soft…Carrots and Apples

Ingredients

  • 10 1/2 oz carrots
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2/3 cup vegetable oil
  • 2 1/8 oz coconut flour (Or almonds or hazelnuts)
  • 3 1/2 oz dried cranberries (Or raisins)
  • 2 apples
  • 3 eggs
  • 1 packet baking powder
  • 1 tsp apple cider vinegar
  • 1/2 vial vanilla flavor
  • orange zest (Or lemon)

Steps

Prepare the ingredients, clean the carrots and cut them into chunks. Peel the lemon for the zest, avoiding the white part.

  • In the mixer, place the carrots, sugar, oil, vinegar, flavoring, juice and zest of the chosen citrus, eggs, and vanilla, blend it all until you get a cream

  • Add the flours, baking powder, and blend again

  • Result

  • Add the cranberries or raisins

  • Pour the obtained batter into the pan greased with oil and sprinkled with breadcrumbs, peel and slice the apples, arrange them in a radial pattern over the batter, sprinkle with two tablespoons of sugar and bake starting from a cold oven at 340°F (170°C) for about 50 minutes. Delicious!
