Spicy Chicken Pan with Peppers

My Italian-based cooking is often transformed with the addition of an exotic twist, especially meat dishes. I enjoy personalizing and varying recipes.

But they remain variants and create a richness of flavors and colors.

Ingredients

Easy Recipe Spicy Chicken Pan with Peppers

  • 6 chicken thighs
  • 10 oz green chili pepper
  • 7 oz potatoes
  • 1 onion
  • 3.5 oz canned sweet corn, drained
  • 4 yellow plums
  • 1 cup sliced almonds
  • 1 tsp garam masala
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • to taste salt

Steps

Prepare the chicken thighs and place them in the oiled pan. Cut the vegetables into pieces and add them to the chicken with all the other ingredients. Cook over low heat for 90 minutes with the pan well covered. If necessary, add vegetable broth or warm water as needed. Slow cooking uses the moisture from the ingredients that does not evaporate because it’s under a lid. Once cooked, plate and serve with balsamic vinegar sauce. I used fresh plums; they can be replaced with dried plums.

  • Place the chicken in the pan

  • Add the other ingredients

  • Cook

  • Serve

Serve immediately. The chicken can be eaten cold. Store in the refrigerator. Freezable.
