Savory Spinach Trees

A fun and tasty proposal, these savory spinach trees with pistachios are perfect as an appetizer, as a placeholder, or to serve at a Christmas buffet.

Very easy to make and egg-free, you can use either fresh or frozen spinach. Obviously, with frozen ones, it’s faster because you don’t need to wash them or wait for them to thaw.

The use of pistachio flour makes them very, very tasty, and it’s really fun to prepare them.

You can prepare the dough a day ahead and keep it in the fridge, or make them, bake them, and freeze them to have them as freshly baked on the day you decide to serve them; just thaw them at room temperature and then warm them for a few minutes in a hot oven turned off.

Ingredients

  • 3/4 cup type 1 flour
  • 1/4 cup pistachio flour
  • 3 1/2 oz spinach, frozen
  • 3 1/2 tbsp water
  • 1 tbsp extra virgin olive oil
  • 1 pinch fine salt
  • Half teaspoon instant yeast for savory preparations
  • as needed extra virgin olive oil
  • pink peppercorns
  • sesame seeds
  • chopped pistachios

Steps

  • – Boil the spinach in a pan, over low heat and covered. If necessary, add a drop of water. Turn off as soon as they are cooked (about 8′).

  • – Blend the lukewarm spinach with water and oil and set aside.

  • – Sift the flour, add the pistachio flour, the pinch of salt, and the instant yeast, and pour everything into the blender jar. In a few seconds, the dough is ready.

  • – Roll the dough on a lightly floured surface, roll it thinly, and cut out the trees with the cookie cutter. Place the cookies on a baking sheet lined with a baking mat or parchment paper.

  • – Brush the surface of the trees with a little oil, and decorate with the available ingredients.

    – Bake in a hot oven at 356°F (180°C) for about 13/15′.
