The asparagus omelette cooked in a pan is a simple and tasty dish, perfect for any occasion. Whether it’s a quick lunch, a light dinner, or an outdoor picnic, this recipe lends itself to many variations and combinations. I enriched it with cheese chunks, but you can choose not to add them if you prefer a lighter asparagus omelette. Asparagus, rich in vitamins and minerals, pairs beautifully with eggs, creating a flavor mix that delights the palate.
The perfect recipe for a delicate and enveloping asparagus omelette, easy to make even for less experienced cooks. With few fresh and seasonal ingredients, you can bring a nutritious and colorful dish to the table. Steps for the preparation of the asparagus omelette
Clean the asparagus. Remove the woody end of the stalk. Peel the thicker part of the stalk with the peeler. Then cut them into slices keeping the tips intact. In a pan, pour oil, garlic and sauté the asparagus with salt for about ten minutes. Remove the garlic.
Break the eggs into a bowl. Add the grated Parmesan and the cheese chunks. Season with salt and pepper and add the asparagus. Stir quickly. The eggs for the omelette should not be overworked.
In a pan, pour a drizzle of oil. Pour the mixture, cover with a lid, and cook the omelette for a few minutes on each side, helping yourself with a lid or a plate to flip it halfway through cooking. You can serve the omelette hot or cold.
Storage
You can store the omelette in the fridge for a couple of days.
