Ingredients

  • 3 slices sandwich bread
  • 20 black olives
  • 9/16 cup ricotta
  • 5/16 cup mayonnaise
  • 9/16 cup ricotta
  • chives
  • 3 oz tuna
  • 1 3/4 oz valerian (lamb's lettuce)

Steps

  • Pit the olives, place them in a bowl, and add the ricotta, salt, pepper if you like, a bit of mayonnaise if needed, and mix.

  • Place the slices of bread on a sheet of parchment paper overlapping them, press with a rolling pin, and fill with a layer of mayonnaise, add the ricotta filling, the valerian, and roll.

  • Cut two oblique pieces about 2 inches at the two ends of the roll, spread it with mayonnaise, and place the two pieces, one on top and the other on the side.

  • Spread with mayonnaise, score with a fork to simulate wood grain, and garnish with pink peppercorns.
