MINI QUICHE with SMOKED SALMON and white bread, with ricotta and cucumber, easy and fast, delicious appetizer for the Christmas holidays made in 5 minutes.
The MINI QUICHE with SMOKED SALMON and white bread is the Christmas appetizer that saves any holiday aperitif: ready in 5 minutes, super delicious with simple ingredients we always have in the fridge. In my case, it started as the classic “oh no, guests are coming” recipe, then it became a holiday evergreen because between smoked salmon, ricotta, cucumbers, and lime with the slightly crispy white bread base… well, it’s impossible not to have seconds!
And yes, it’s one of those clever ideas that seem super chic even if you make them on the fly, perfect for a Christmas appetizer or a New Year’s Eve buffet.
The beauty of these mini quiches is that they don’t require puff pastries, doughs, or a thousand steps: cut the white bread, arrange it in the molds, and into the oven it goes, then spread the ricotta cream, add the salmon and the rest of the ingredients.
The result is scenic and super light, just like a modern appetizer should be.

USEFUL TIPS
Lightly toast the white bread before placing it in the molds: it becomes crispier and supports the filling better.
Add a teaspoon of lemon juice to the ricotta and avocado cream for a fresher taste.
You can substitute ricotta with spreadable cheese for an even creamier version.
Smoked salmon can be replaced with smoked trout for a milder flavor.
Serve them warm: they are at their best!
