CHILLED APPLE AND MASCARPONE MINI CAKES, easy and quick treats with a crumbled biscuit base and a delicious mascarpone cream, a perfect dessert after lunch or dinner, creamy and fragrant with apples, also great for Christmas holidays.
There are those desserts you make once and then never leave. The chilled apple and mascarpone mini cakes are just like that: creamy, fragrant, with a crunchy biscuit base and a soft heart of mascarpone. They are made in minutes, no baking required (just a bit of fridge time), and the result is an elegant but simple dessert just the way we like it.
Perfect after dinner, ideal for Sundays or as a dessert for Christmas holidays, these mini cakes are a modern and fresh version of the classic apple pie… only here the apples marry the velvety sweetness of mascarpone and a light crunch given by the biscuits.
The recipe for chilled apple and mascarpone mini cakes is very easy:
just crumble some digestive biscuits or shortbread, mix them with a bit of melted butter, and press them into small molds or pastry rings to create the base. Then prepare the cream with mascarpone and sugar to sweeten naturally.
Separately, cook the chopped apples in a pan with cinnamon (the smell of home and holidays 😍), and when they cool down, add them over the cream. A dusting of powdered sugar and it’s done: a no-bake dessert that looks like it came from a pastry shop.

Blogger’s Tip
You can prepare them in advance and store them in the fridge for a couple of days — in fact, they become even better!
If you want a more defined chilled effect, put them in the freezer for an hour and take them out 10 minutes before serving: the texture will be perfect.
Additionally, you can replace mascarpone with ricotta for a lighter version or with Greek yogurt if you want a fresher and more balanced dessert.
