Ingredients
- 6 eggs
- 1 1/2 cups all-purpose flour
- 2/3 cup sugar
- 1 tsp cream of tartar
- 1 1/4 cups powdered sugar
- 3 tbsp egg white
Steps
Separate the yolks from the egg whites, whip the egg whites, as soon as they start to swell, add the cream of tartar and set aside.
Whip the yolks with the sugar then combine the two mixtures alternating with the flour.
The mixture should be firm; if it isn’t, you can’t make the cookies, but you can use the mixture by pouring it into a baking dish and baking it as a sort of biscuit cake.
Pour the mixture into a piping bag and make round cookies by going over them a couple of times.
Bake in a preheated oven at 338°F for about 12 minutes, they should turn golden.
Remove from the oven and let cool.
Whip the egg whites with the powdered sugar and a couple of drops of lemon.
Decorate the cookies with sugar, add colorful sprinkles, and let them set.
