The recipe to prepare the no-pastry baskets is very simple, just have some eggs at home, prepare a batter, cook for a few minutes and they are ready to be filled as you like.
Great with a tuna or salmon mousse or with a ham mousse or many seasonal vegetables.

Ingredients
- 2 eggs
- 1 tablespoon all-purpose flour
Steps
In a bowl, beat the eggs with a whisk with a tablespoon of flour and spices to taste, I use chives and oregano.
Heat a small pan, the one for eggs, I didn’t oil it, pour a small ladle of batter and as soon as it can be detached, turn it over and cook the other side for a few seconds.
Remove and place each small omelet in a muffin tin.
Turn on the oven to 356°F (180°C), it does not need to reach temperature, the important thing is that it’s hot, and cook the small omelets for 1 minute.
Remove from the oven and fill with pieces of cheese and ham.
