- 1 3/4 cups all-purpose flour
- 1/2 cup butter
- 1/4 cup sugar
- 1 teaspoon baking powder
- lemon zest
- 1 egg
- jam (blueberry)
Steps
Work the butter with the sugar in a bowl, add the egg, lemon zest, and finally the sifted flour with the baking powder.
Quickly work the mixture.
Dust the work surface with flour, roll out the dough by hand or with a lightly oiled or floured rolling pin.
Cut the dough with a glass, about 2 3/4 inches, and fill with a tablespoon of jam and some fresh blueberries.
Close with a disc of dough, seal the edges with a fork, and place them on a baking sheet lined with parchment paper.
Bake in a preheated oven at 350°F for about 15 minutes until the shortbread is golden.
Remove from oven and dust with powdered sugar.
