QUICK FLAKY SEMOLINA MINI PIZZAS

Ingredients

  • 3/4 cup re-milled durum wheat semolina flour
  • 1/4 cup water
  • 1 1/2 tbsp butter
  • Half tsp instant yeast for savory preparations

Steps

For the recipe, I used organic stone-milled semolina flour; the amount of water might change with other flours but it’s about half the weight of the flour.

  • Pour the flour with the yeast into a bowl, add the water and knead well.

  • Melt the butter and set aside.

  • Roll out the dough into a rectangle, brush with butter then bring one of the long sides toward the center and cover with the other long side, then bring one short side toward the center and cover with the other short side.

  • Roll out the dough again, brush with butter and repeat the folding round.

  • Brush again with butter and repeat the folding round.

  • Roll out the dough and cut with a 4-inch cutter or a cup, place the mini pizzas on the baking sheet, brush with oil and bake at 392°F for 10 minutes.

  • Remove from the oven and top with provola, speck, or cherry tomatoes, sprinkle with oregano and put back in the oven for a few minutes.
