  • 1 1/4 cups all-purpose flour
  • 2 tbsps ricotta
  • 1/3 cup water
  • 1 tsp instant yeast for savory preparations

  • 1 oz bacon
  • 3 1/2 oz smoked provolone
  • 3 1/2 oz potatoes

Steps

  • Pour the flour into a bowl, add the yeast, water, salt and mix, add the ricotta, knead well and if needed add a little more water.

  • The dough is slightly sticky, divide it into 2 or 4 pieces and roll them out.

  • Place them on the baking tray lined with oiled paper, oil the bread, add the grated potatoes and some rosemary, bake for about 12 minutes in the hot oven at 450°F

  • Remove from the oven, add the grated potatoes with a wide-hole grater, the provolone and bacon, put back in the oven for another 2 minutes or so to melt the provolone.
