Ingredients

  • 2 cups all-purpose flour (or type 2)
  • 1/2 tsp fresh yeast
  • 1/2 cup water
  • 1/2 tsp salt
  • 2 sausages
  • 3.5 oz speck
  • 5.3 oz buffalo mozzarella (or fiordilatte)

Steps

  • Prepare the dough, pour the flour into a bowl, dissolve the yeast in water and gradually add it to the flour, mixing well, then add salt and knead thoroughly.

  • Let it rest for 1 hour, then take the dough, shape it into a rectangle with your hands, bring the short side towards the center and cover with the other short side, close into a ball, place the dough in the bowl, cover and let it rest all night or until doubled.

  • Cut the sausages in half and cook them in a pan with the lid closed.

  • Once risen, take the dough and divide it into two parts or four if you prefer, oil and fold more or less in half, not completely half, stay a few inches more inward from the halfway point.

  • Bake in a hot oven at 450°F for about 7-8 minutes, until they color, at most 10 minutes.

  • Arrange some slices of speck and mozzarella on the sausages and melt in the pan with the lid closed.

  • Open the pizzas and fill with slices of mozzarella and speck, then the sausages, and more speck and mozzarella.

  • Put back in the oven for a few minutes, 3-4 minutes.
