Ingredients
- 1 3/4 cups Manitoba flour (or all-purpose flour)
- 1 1/2 cups all-purpose flour
- 1/3 cup potato starch
- 1/3 cup cornstarch
- 1/4 cup rice flour
- 1/4 cup fresh liquid cream
- 1/4 cup butter
- 2 tablespoons vegetable oil
- 3 egg yolks
- 2/3 cup sugar
- 1 teaspoon salt
- 18 g fresh brewer's yeast
- 3/4 cup milk (milk + orange juice totaling 180 ml of liquids)
- 1 cup whipping cream
- 1/2 cup condensed milk (or white chocolate)
- orange zest
- milk chocolate (for decoration)
Steps
Mix all the flours in a bowl, add the egg yolks, cream or milk, sugar, and salt and mix with a fork.
Add the crumbled yeast, butter, oil, and knead by adding the milk and orange juice, until you get a soft and non-sticky dough.
Line a large rectangular baking dish 10 x 13 inches to make them a bit lower like the originals and let the dough rise.
I prepared it in the evening, so I placed the dough in a bowl and continued the next day.
When the dough has doubled in volume, bake at 340°F for about half an hour.
Remove from the mold and let cool.
Whip the cream, add the condensed milk or the melted and cooled white chocolate and the orange zest.
Cut the brioche into 3 layers and fill.
To decorate, melt the milk chocolate and make lines with a small-tipped syringe first horizontally and then small perpendicular ones.
