Ingredients
- 18 oz ricotta
- 1 1/3 cups cooked wheat
- 5 oz almonds
- 4 eggs
- 2 1/2 cups sugar
- 1 1/2 tbsp butter
- 1/2 cup milk
- 1 vial orange essence (millefiori)
- 3 3/4 cups all-purpose flour

- 7 oz lard (or butter)
- 1/2 tsp baking ammonia
- lemon zest
Steps
N.B. The traditional dessert is tall, we like it short as in the photo, the quantities are for a standard pastiera, thus, tall.
Chop the almonds for the base, place the flour with the baking ammonia in a bowl or on the work surface and make a hole in the center, add the sugar, lemon zest, eggs, and mix.
Add the lard and almond flour, knead well and set aside the shortcrust pastry.
Cook the wheat with the milk and butter until it becomes softer and creamier.
In a bowl, put the ricotta, sugar, millefiori essence, wheat, and then chop the almonds coarsely, not into flour, and mix everything well.
Take the shortcrust pastry and divide it into two parts, one larger for the base and the other for the covering strips.
Roll out the pastry in a 10-inch pan or smaller if you want it even taller and fill with the filling, if you prefer you can blend it with the immersion blender.
Roll out the rest of the pastry and cut the covering strips.
Bake in the hot oven at 350°F for about 45 minutes.
