Mimosa Cupcakes Filled with Cream and Strawberries

Ingredients

  • 2 eggs
  • 2.1 oz sugar
  • 2.5 oz all-purpose flour
  • 12 strawberries
  • 5.3 oz pastry cream (diplomat cream)

Steps

  • Prepare the diplomat cream following this RECIPE and set aside.

  • Preheat the oven to 356°F

  • Meanwhile, whip the sugar with the eggs, gradually add the flour. It’s better to fold it by hand as there’s no yeast, so you avoid deflating the mixture.

  • Pour the mixture into hemisphere-shaped molds or large muffin cups and place a teaspoon of cream and then a whole strawberry in the center.

  • Leave two cupcakes empty without cream, they will be used for the mimosa crumbs.

  • Cover the cupcakes with a little batter, level well and bake.

  • Bake for about 15 minutes, as soon as they turn golden they’re ready.

  • Remove from oven and let cool, take them out of the mold if you used the hemisphere one.

  • Cut the empty muffins into pieces, put some cream on the cupcakes and cover with sponge cake pieces.
