- Difficulty: Very easy
- Cost: Very cheap
- Preparation time: 30 Minutes
- Portions: 4
- Cooking methods: Oven, Stove
- Cuisine: Italian
- Seasonality: Fall, Winter, and Spring
Ingredients
- 10 oz broccoli rabe
- 3 sausages
- 3.5 oz provola cheese
- 1.5 cups flour (whichever you usually use, I use type 2)
- 1/3 cup water
- 1 egg
- 2 tablespoons extra virgin olive oil
- 1 teaspoon instant yeast for savory preparations
Steps
Wash the broccoli rabe and cook in a pan with oil and the lid closed, turning them until they color, trying not to add water.
Remove the casing from the sausages and cook a bit in the pan, not fully, and set aside.
Prepare the dough, pour the flour into a bowl, add the oil, yeast, salt, egg, mix, and gradually add the water; the dough shouldn’t be too sticky.
Obviously, if needed, add a bit more water or flour, as different flours might slightly change the amounts.
Work the dough a bit and divide it into 4 parts, roll out and create rectangles, twist the ends like candy wrappers.
Place them in a tin or on the baking sheet lined with parchment, placing them side by side separated by parchment paper.
Fill with the broccoli rabe, the meat, and provola cheese, oil, cover with a bit of parchment paper to prevent the filling from burning too much, and bake in a preheated oven at 392°F for about 15 minutes.
Check during cooking, if necessary lower the temperature to 356°F
Bon appétit
