- 6 eggs
- 1.8 oz grated Parmesan cheese
- to taste dried parsley
- 2 potatoes
- 3.5 oz frozen peas
- 1.8 oz speck
- to taste salt
- to taste extra virgin olive oil
- to taste black pepper (optional)

Steps
Peel and cut the potatoes into small cubes or thin slices.
In a large pan, heat a drizzle of extra virgin olive oil over medium heat. Add the potatoes and cook for about 5 minutes, stirring occasionally to prevent sticking.Add the frozen peas and continue to cook until the potatoes are tender and golden and the peas are well cooked.
Meanwhile, crack the eggs into a bowl. Add the grated Parmesan, parsley and whisk until all ingredients are combined. Add salt, pepper, and the speck cut into strips and mix.
Pour the egg mixture into the pan with the potatoes and peas, level with a spoon, and cook over medium-low heat for about 6/7 minutes, until the base of the frittata is golden and the mixture has set.
Flip the frittata (using a plate or lid) and cook the other side for another couple of minutes, until well browned.
For this operation, I recommend using a frittata pan.
